Add a variety of whole-grain breads and rolls, flavored mustards, low-fat mayo mixed with herbs, and toppings such as crisp lettuce leaves, tomato and onion slices, and roasted red peppers.

Cook up a kettle of vegetarian or lean-beef chili, chockfull of beans and other veggies. Offer toppings like shredded reduced-fat cheddar cheese, chopped green onions, and low-fat sour cream. Serve with low-fat cornbread or baked tortilla chips.
